I promise that even though this salad is super simple - it's also SUPER yummy.   INGREDIENTS 1 package arugula, rinsed 1/2 fresh lemon 2-3 tablespoons olive oil 3 tablespoons grated or shaved parmesean pine nuts, toasted chickpeas or croutons (optional) fresh cracked pepper salt to taste INSTRUCTIONS There's nothing to it, really.
